How to Make the Cauliflower Pizza
Start off by taking some time to cook. The cauliflower crust takes about 1 hour and 15 minutes to make.
First, wash the cauliflower and break it down into small florets. Add the florets to a food processor and pulse until finely minced (if you don’t have a food processor you can also grind the cauliflower).
Add the shredded cauliflower to a frying pan and fry on low to medium heat for about 30 minutes. Stir occasionally to make sure the cauliflower does not burn. I like to cook the cauliflower that way to preserve the nutrients, but you can also place it in a microwavable bowl, cover it with a lit and cook it for 20 minutes.
Once the cauliflower is cooked, let it cool completely. Transfer it into a clean cheese cloth or kitchen towel and squeeze out as much liquid as you possibly can. Transfer the cauliflower to a bowl, set aside and let cool.
Preheat your oven to 200°C/400°F. Add the egg, shredded mozzarella and almond flour and mix well. Take a baking tray, turn it upside down and cover it with parchment paper. Add the dough in the shape of a heart. It should be about 1.2 cm thin. Make sure the edges are not thinning out too much. Place the tray in the oven and bake for 20 minutes.
Once the crust is baked, flip it around and place it on a new piece of parchment paper. Then add the toppings starting with the tomato passata and sliced mozzarella. Then add the basil, mushrooms and turkey breast. Drizzle with a bit of olive oil. Place it back into the oven and bake for another 15 minutes.
Let cool a bit, add some freshly ground black pepper and enjoy!
